December is a time when everyone is feeling festive as the shadow of Christmas dawns ever closer. A celebration that is often over looked is the winter solstice. Winter Solstice marks the longest night of the year, where the earth’s axis tilts the furthest away from the sun providing all locations north of the equator less than 12 hours light. For thousands of years many cultures have celebrated this day.

The Romans celebrated winter solstice with a week long feast honouring the sun god Saturn. During the Iron Age, the Celts, Nordic’s and other ancient Europeans celebrated the winter solstice by feasting and drinking. The winter solstice is also a pagan holiday of Yule, a celebration of the rebirth of the sun. Pagans often celebrate Yule by lighting candles and hosting feasts.

Wassail is hot mulled cider traditionally drunk as part of a medieval English drinking ritual known as wassailing.  A ceremony that involves singing and drinking to the health of the trees and crops in hopes that the farmers will receive a good harvest the following year.

Winter Root Gratin

This winter root gratin made from turnips, Kohlrabi, rutabaga (Swede) and parsnips is a great alternative from the regular potato gratin and is the perfect winter warmer for this year’s longest night.
